Technologist Valuable Insects for Food VALUSECT (Ref 164)

Basic Function of the Role:

The successful applicant will play a key role in supporting an EU funded research programme (ValuSect, Interreg European project) where the candidate will carry out sample preparation and analysis of insect based products to determine composition, shelf-life analysis and functionality.

As part of this role, trials will be designed and carried out to determine the processing effect on insect based materials.

In addition the successful candidate will also have responsibilities for statistical analysis of the results, reporting and attending meetings with other partners, and assisting with other tasks relevant to the project.

Job Objectives:

Record and manage various samples received from the project partners in an appropriate manner.
Ensure that project tasks are delivery timely according to project plan.
Perform proximate analysis on raw materials and samples.
Preparation of extracts for protein/lipid determination and analysis using e.g. SDS PAGE, fatty acid profiling.
Perform techno-functional analysis on extracts. (solubility, emulsification, water and oil holding capacity).
Design and perform trials to determine the impact of processing on insect based materials.
Optimise and develop processing conditions to preserve/improve insect based products properties.
Assist with reporting to project leader, data analysis and dissemination. Contribute to scientific and technical publications.
To assist Teagasc in meeting the commitments of the Quality Customer Service Charter and Action Plan.

Person Specification

Essential:

Candidates must have a Level 8 degree in Food Technology, Food Science, Biochemistry or a related discipline.

Desirable:

A postgraduate degree and/or research experience in Food Science and Technology would be a distinct advantage.
