Teagasc Post-Doctoral Research Fellow Level 1 (PD1) – Dairy Technology (Ref: PD1/ MPK/0218)

Basic Function of the post:
This post-doctoral scientist will have a PhD in Food Science or related discipline. The appointee will be part of a team of researchers examining the interactions of dairy protein based ingredients with the aim of improving and controlling heat stability. The successful candidate will be experienced in evaporation/drying technologies and other unit processes involved in dairy ingredient development.

Duties & Responsibilities specific to this project:
• Study the impact of physico-chemical changes in dairy-based products during thermal, separation, concentration and dehydration processes.
• Apply recent developments in dairy protein chemistry on denaturation / aggregation kinetics and the impact on viscosity and gelation of colloidal systems.
• Design emulsion based formulation strategies for controlled nutrient (primarily protein and carbohydrates) interactions throughout processing.
• Identify new processing technologies for processing of liquid concentrates.
• Design pilot plant trials to test research hypotheses in an industrially relevant manner.
• Operate pilot plant equipment including membrane systems, heat exchangers and spray driers.
• Design and manage experiments, performing statistical analysis and publishing results in scientific and popular press.
• Liaise with industry partners, project sponsors and key stakeholders.
• Develop and maintain active collaborative contacts with the relevant national and international research communities.

Person Specification

PhD in Food Science.
Relevant research experience not to exceed 3 years’ post-PhD.

• Strong knowledge of milk protein drying.
• Experience in unit processes associate with dairy ingredient generation.
